The Wood Pulp Banneton Proofing Basket Oval Smooth supports structure and shape through the final rise, releasing cleanly for a smooth, minimal finish on the crust.

Made in Germany from natural wood pulp, it encourages airflow during proofing and helps regulate moisture as the dough ferments — giving you consistent, repeatable results loaf after loaf.

The long oval shape is ideal for bâtard-style loaves.

Care

  • Before first use, heat your oven to 170°C, turn it off, and leave the basket inside for 20 minutes to season it
  • Flour the interior before each use
  • Never wash with water or soap
  • Brush clean and allow to dry fully after every bake — residual oven warmth works well
  • Store in a dry, well-ventilated place out of direct sunlight

Please Note

Each banneton is hand-made, so expect variations of around 0.5–1.0 cm in size, and natural yellow-brown marks in the wood pulp. Both are normal.

Frequently asked questions

My dough sticks to it, what am I doing wrong?
Usually too little flour, or the basket has been washed. Dust well with rice flour, and never wash it.
Rice flour or normal flour?
Rice flour resists sticking best; a rice and plain mix also works well.
How do I clean it?
Let it dry completely, then brush out with a dry brush. No water, no soap.
Do I need the linen liner?
Optional. It's brilliant while you're learning for extra stick resistance, and most bakers drop it once confident and want the coil pattern.
Round or oval?
Round for boules (easiest to start with), oval for batards.
