The basket that
holds the shape

A banneton supports the dough through its last rise, so the loaf goes into the oven tall instead of spreading across the tray. Posted same day from the UK.

How a banneton is used

Flour it, fill it,
fridge it.

A banneton holds the dough while it proves, so the loaf rises up rather than out. The rest of it is looking after the basket.

  1. 1

    Flour it well

Rice flour resists sticking better than anything else, and a rice and plain mix works nearly as well. Flour it properly and most sticking problems never happen.

  2. 2

    Shape and drop it in

Seam side up, so the smooth side is against the basket and faces you in the oven. The creases press into the crust while it proves.

  3. 3

    Cold overnight

Cover it and put the whole basket in the fridge. Chilled dough holds its shape, scores cleanly, and is ready to bake with straight from the fridge.

  4. 4

    Turn out and brush

Tip the loaf onto a bread sling, score & bake. Let the basket dry completely, then brush the flour out. No water, no soap, and it lasts years.

Banneton questions

From which flour to use, cleaning maintenaince tips and which banneton material suits my style of baking best.

My dough sticks to it, what am I doing wrong?

Usually too little flour, or the basket has been washed. Dust well with rice flour, and never wash it.

Rice flour or normal flour?

Rice flour resists sticking best. A rice and plain mix also works well.

Round or oval?

Round for boules, which are the easiest shape to start with, and oval for batards. The bamboo banneton and the silicone basket both come in either shape, so it is one decision at the point of ordering.

Do I need the linen liner?

On the bamboo baskets it is included, so you get both: the liner for the cleanest release, and the bare cane for the spiral rings. The wood pulp baskets need no liner at all.

What size do I need?

Match the basket to your dough weight, not your loaf tin. Most home recipes make 500g to 1kg of dough, which suits a 23cm round or a 25cm oval. The wood pulp baskets come in 500g and 750g sizes if you want to be more precise.

How do I clean it?

Let it dry completely, then brush the flour out with a dry brush. No water, no soap. Water warps cane and invites mould, and a basket that is only ever brushed will last for years. The silicone one is the exception: it goes in the dishwasher.

Bamboo, wood pulp, sugarcane or silicone?

Bamboo is the classic, comes with a liner and gives spiral rings. Wood pulp is denser, needs no liner and dries fastest, which is why commercial bakeries use it. Sugarcane is the cheapest way into a proper oval. Silicone folds flat, goes in the dishwasher and suits a small kitchen. The comparison above puts them side by side.
