Frequently asked questions

What is a lame for?
Scoring the dough just before baking so it expands in a controlled way and opens into an ear.
Which blade does it take?
Standard double sided razor blades. Swap the blade when it starts to drag rather than slice.
Straight or curved blade?
Curved gives you an ear on boules and batards; straight suits detailed patterns and scoring flat.
Any tips for a clean score?
Score cold, firm dough with a confident, shallow, angled cut in one motion. Do not saw at it.
How do I store it safely?
The blade is sharp, so cover or retract it after use and keep it well away from children.

Very compact lame, the blade fits inside the wooden disc. There is no instructions; I've tried 2 ways:
1) Placed between the two halfs, which twist against each other to tighten the grip, and removed for storage every time.
2) Fully unscrew the two wooden halves and sandwich the blade inbetween, securing with the screw through the central hole of the blade. When loosened, a flick of the wrist brings the blade out, then tighten the wood. Loosen and push back in for storage.
Overall, small and fiddly; if you have big or clumsy hands, don't go for this one.

For some reason this was much smaller than I expected (4.5cm diameter) It took me a minute or so to actually work out how to open it as it came with no instructions. At first I thought I needed a small Allen key. Doh! 🤦‍♀️ Just twist it apart. You have to be careful putting in the blade. I found that once the blade was fully in, when I needed to use it I just unscrewed it a little, shook the blade out enough to use then tightened it in position. Once used I unscrewed it a bit then shook it back in to keep it safely inside. That way I didn’t have to touch the blade at all, not until it needs to be changed anyway. It’s a cute little piece of kit, making it easy to control when scoring your dough. Lovely patterned wood stored safely in its own little pouch that also fits the little box of spare blades that come with it.
If you haven’t got great dexterity with your fingers and because of the size, when unscrewing with the blade out you really have to watch that you don’t catch your fingers on the blade, which might be a problem for some.

Fabulous little tool. Easy and safe to use. Does the job and takes up no space in its little protective case with plenty of replaceable blades. I may venture and do some patterns on the sourdough in future.

Hi Nadine, so pleased you are happy with your purchase. The bread looks delicious!

I found this easier to use than the lame with the curved razor blade. It was easier and smoother to get a deeper cut on a sourdough. I did find it difficult to twist to open to get the razor blade in though. Maybe you could send them out not quite to tightly tightened?

Hi Nicole, thanks for the feedback I will be sure to check each lame before sending out in future. Glad you are finding it easier to use than the curved razor (after un tightening it of course!) Happy baking!
