Pullman Loaf Tin

A Pullman tin bakes a square loaf with flat sides and a flat top, so every slice is the same size and shape. That is what makes it the tin for sandwich bread, toast and anything you want to slice thin and even.

It bakes a loaf of up to 750g finished weight. Aluminised steel with a non-stick coating, and holes in the base so air can move underneath. External size 21 x 11 x 11.5cm.

Pullman tin, bread tin with lid, Pullman pan

These all describe the same thing. A Pullman tin is a bread tin with a lid, and you will see it sold as a loaf tin with lid, a sandwich loaf tin, a pain de mie tin, or, in American recipes, a Pullman loaf pan or a Pullman bread pan. What they have in common is straight sides and a cover that slides over the top, which is what forces the loaf into a square.

If you are working from an American recipe, check the size before you scale the dough. Pullman pans sold in the US are commonly larger than this one, which takes up to 750g of finished dough.

How we bake in it

Lid on for the first half of the bake, off for the second. The lid keeps the sides square and the top flat while the loaf sets, and the uncovered stretch at the end lets the top colour properly instead of staying pale.

The lid slides all the way off, so you can also bake it covered the whole way for a completely flat top, or leave it off from the start for an ordinary domed loaf.

With or without bread bags

The bundle adds ten kraft paper bread bags. A sandwich loaf gets eaten over several days, and paper keeps the crust dry where a plastic bag turns it soft. Worth it if you are baking these to last the week rather than to eat the same day.

Looking after your tin

Please read this before the first bake. The tin is aluminised steel with a non-stick coating, and that surface is what stops it rusting. Left intact it will last for years. Cut, scraped or scoured through, the bare steel underneath is exposed, and rust needs bare metal to start.

  • Never cut bread inside the tin. Turn the loaf out onto a rack first. A bread knife, palette knife or metal spatula used inside the tin will score straight through the coating.
  • Grease or line it before the dough goes in. A Pullman silicone sling lines it in one piece and keeps everything metal away from the coating.
  • Wash by hand only in warm soapy water with a soft cloth or sponge. No scourers, no wire wool, no abrasive cream.
  • Not dishwasher safe. Dishwasher detergent attacks the coating.
  • Do not soak it, and dry it thoroughly straight after washing. A tin put away damp will mark.
  • Store it dry, lid off or loose so air can move around it.

Every tool we stock is baked with in our own kitchen before it goes on the site. Looked after this way, the tin should not rust in normal use.

This rusted really quickly, I had only purchased it a little over a month ago.

Hi Jen, we’re sorry to hear you’ve experienced an issue with rust on your Pullman loaf tin.

All of the products we sell are tested by us to ensure they’re fit for purpose, and when properly cared for, the tin should not rust during normal use.

The tin has a protective aluminised coating which helps prevent oxidation. It’s important that this coating isn’t damaged during use or cleaning, as exposing the steel underneath can allow rust to develop. In particular, we recommend avoiding knives or other sharp utensils when removing bread from the tin, as well as abrasive scourers when cleaning it.

We provide care instructions on the product page and strongly recommend following these to keep the tin in good condition. After washing, it should also be thoroughly dried before being stored.

We completely understand that seeing rust after a relatively short period is disappointing, but this isn’t something we would expect to occur when the tin is used and cared for in accordance with the instructions provided.

Don't like the line patterned tin , would have preferred a smooth finish..Imo

Hi Henry,

Thanks for taking the time to leave your review.

I understand your preference for a smooth finish! However, we choose this textured, corrugated design for a few important performance reasons:

Better Heat & Airflow: The parallel ridges allow air to circulate beneath the loaf, distributing heat evenly to ensure a perfectly baked crust without burning.

Easy Food Release: The textured pattern reduces the surface area contacting the dough, making it much easier to slide the loaf out of the tin after baking.

Strength & Durability: The fluted design gives extra structural strength to the metal, preventing the tin from warping under intense oven temperatures.

We really appreciate your feedback, and I hope this explanation helps show why the tin is built this way. Please let us know if we can help you with anything else!

Expensive but it’s a great tin. I’ve used it twice and no sicking after sprinkling base with semolina. It’s a shame it doesn’t come with any recipes though as I had to guesstimate quantities
