A stoneground wholegrain dark rye flour from Matthews, made from British rye grown on the Cotswold hills between Stow-on-the-Wold, Bourton-on-the-Water and Burford. It contains 100% of the rye berry, bran and germ included, and is sometimes sold as pumpernickel flour.
For sourdough
Rye and sourdough go together. A spoonful of rye in your starter feed tends to make it more active, which is why so many bakers keep a bag in.
At around 8% protein, rye has much less gluten than wheat, so a 100% rye loaf is dense and moist and is best baked in a tin. For a lighter, more open loaf, use 25 to 50% rye alongside a strong white such as the organic strong white or the 100% Canadian.
Folic acid
No added folic acid. The UK folic acid rules cover wheat flour, not rye, and this flour has no additives at all. See all our flour with no added folic acid.
Ingredients
Wholemeal Rye Flour.

Chosen by bakers, for bakers
Sourdough Supply Co. is a small UK team of home bakers. Everything we stock is used in our own kitchens before it goes on the site, and if a tool does not earn its place, we do not sell it. Questions about your bake? Email us and a real person will reply.
