A brass thumb screw sets how tightly the blade is held, so it does not shift mid-cut. The handle is slim enough to hold like a pen, useful for anything more detailed than one score down the middle.

This is the one to pick if the lame is going in a drawer with other utensils, or travelling with you. If you would rather have the blade fixed and exposed, the traditional walnut lame is the simpler tool.

Change the blade the moment it drags rather than slices, because a dull blade tears the surface of the dough and technique will not save it. It takes any standard double-edge razor blade. We stock Japanese Feather Hi-Stainless blades, which hold an edge through wet dough better than most.
